Muffins!
Last Saturday morning, we made some banana muffins for our Botanic Gardens outing that evening. I measured out all the ingredients. Mike and Matthew mashed the bananas, beat the egg and mix the sugar and flour together. It was really simple - mix the wet and dry ingredients together.
Here's the receipe for 9 medium muffins.
Dry ingredients - mix well
2/3 cup plain flour
1 tsp baking powder
1/4 cup brown sugar
Wet ingredients - mix well
2/3 cup vege oil
1 egg, beaten
other ingredients
1/2 cup rasins
4 medium size bananas, mashed
simply pour the dry mix into the wet mix (or the other way round, it doesn't matter, really) and fold in. the mixture would still be lumpy. fold in bananas and rasins. fill muffin cups. bake in pre-heated 160oC oven for 20min. cool on rack. that simple!!!

Matthew had one, as soon as it was cool enough. We brought the rest for the other toddlers. We were quite pleased that Matthew actually shared his muffins with the other 2 boys. Well, almost. Joshua did not take the muffin from Matthew and Matthew got impatient, virtually throwing the muffin at Joshua! Joshua was so happy to be running around that he did not finish the muffin. When Ignatius came a little whilte later, Matthew took another muffin and waited for Ignatius to take the muffin. Ignatius virturally stuffed the entire muffin into his mouth, then took his time to chew and swallow and had a drink of water after that.
